An Australian doctor has revealed her go-to $8 dinner from Aldi that’s perfect for busy families on the move.

Dr Preeya Alexander, known for her practical and health-conscious tips, took to social media to rave about the budget retailer’s spanakopita from the frozen aisle.

The flaky Greek-inspired pastry, filled with spinach and cheese, has become one of her regular meals for her family-of-four, with easy preparation.

‘We needed a quick, easy dinner to throw into the picnic basket to take down to the beach, and the Aldi spanakopita is a win,’ Dr. Alexander shared.

‘It’s delicious, cost-effective, and packed with rainbows.’

When it comes to food, ‘rainbows’ refer to meals that include a wide variety of colourful fruits and vegetables.

Each colour represents different nutrients and antioxidants that contribute to overall health.

Priced at just $8, the spanakopita even comes with its own baking tray, eliminating the need for extra washing up – a bonus for busy parents.

Dr. Alexander added fresh lettuce, tomatoes, and a sprinkle of ‘everything bagel’ seasoning.

For a relaxed outdoors picnic, wrapping the warm pastry in lettuce provided an easy-to-hold, utensil-free meal.

‘This was an easy dinner – we didn’t want to pack cutlery or plates,’ she said, emphasising the simplicity and health benefits of the dish.

‘Remember, it doesn’t have to be fancy to yield benefit for the body and the brain.’

With its affordability, convenience, and versatility, it’s no surprise this $8 Aldi gem is becoming a staple for Aussie families.

The doctor’s followers were quickly sold on the affordable meal idea. 

‘I’m heading to Aldi now to grab this spanakopita!’ one fan commented.

Dr Alexander previously shared another simple mid-week dinner she swears by.

She said her tuna sushi bake is the perfect dish – and it’s easy to cook when you’re in a rush.

‘Canned tuna is the best – it’s easy, it’s always in the pantry, and it’s cost-effective,’ she said in a video.

‘I’m whipping this up mid-week while I’m on the run with hangry kids and I don’t have much time.’

Ingredients required for the dish are sushi rice, mirin, sesame oil, canned tuna, celery, red onion, Kewpie mayonnaise, nori sheets, avocados, furikake seasoning, cucumbers, and baby corn. 

To make the dish, you first have to preheat your oven to 180C.

Ingredients required for the dish are sushi rice, mirin, sesame oil, canned tuna, celery, red onion

The recipe also calls for Kewpie mayonnaise, nori sheets, avocados, furikake seasoning, cucumbers

Cook your sushi rice and then add the mirin and sesame oil to it.

While your rice is cooking, combine the tuna, celery, onion, and mayonnaise in a bowl and mash it together with a fork.

Grab an oven tray and spoon your rice onto it before layering your tuna mix on top.

Pop it into the oven for 12-15 minutes or until you’re satisfied with the temperature.

To serve, simply spoon some of the bake into a nori sheet and pair it with some chopped cucumber.

‘The beauty of this dish is that you can throw in anything – peas, carrots, cucumber,’ Dr Alexander said.

‘Any rainbow counts for the body.’ 

‘You can also sprinkle more things on there like roasted black sesame seeds,’ she said.

How to make a tuna sushi bake

Ingredients:

1 1/2 tbsp mirin 

1 1/2 tbsp sesame oil 

furikake seasoning 

425g tuna 

2 stalks celery, diced

tamari sauce, to serve

 1/2 red onion 

2 cucumbers 

1 cup Kewpie mayo 

nori sheets 

2 avocados 

410g baby corn

Method:

Preheat oven to 180C Cook the sushi rice

When cooked, combine with mirin and sesame oil 

While rice is cooking, combine tuna, celery, onion, and 1/2 cup mayonnaise in a bowl and mash with a fork 

Spoon your rice onto an oven tray and layer your mixture on top 

Pop into the oven for 12-15 minutes 

Serve with the cucumber, avocado, and nori sheets
